PLUM PUREE (Serves 5)
- 675 g / 1 1/2 lb ripe plums
175 g / 6 oz sugar
2 tbsp water
2 cinnamon sticks (or 1 tsp ground cinnamon)
(Alternative spice: try with ground ginger or ginger pieces
in syrup)
Wash, halve and stone the plums. Place plums in a saucepan
with the sugar, water and cinnamon. Bring to the boil, then
reduce the heat and simmer gently until the plums have softened.
Mash by hand or puree as desired.
…Delicious served hot with ice cream or yoghurt, or on top
of cereal for breakfast!
SPICED APPLE SALAD (Serves 4)
- 3 apples, coarsely chopped
4 sticks celery, chopped
3 tbsp walnuts, coarsely chopped
3 tbsp mayonnaise or yoghurt
2 tsp sugar
pinch of allspice
1 tsp lemon juice
Place chopped apple, celery and walnuts in a bowl. Combine
mayonnaise or yoghurt with the sugar, allspice and lemon juice.
Toss sauce with the apple mixture.
…Serve alone or on a bed of green salad – perfect for the
summer or winter!
CARAMELISED PEARS (Serves 2)
- 1 tbsp butter
2 tbsp brown sugar or honey
2 pears, peeled, cored and sliced.
1 tbsp brandy (optional)
1 tsp lemon juice (optional)
Melt the butter in a frying pan, then stir in the sugar.
Simmer, stirring occasionally until it begins to turn golden
brown. Add the brandy and/or lemon juice if desired, and mix.
Add pears and cook slowly until tender and caramelised. Serve
hot.
…For extra luxury, stir a few tbsp of cream into the final
caramelised pear mixture!
